Mary’s Spaghetti and Meatballs

Whenever birthday’s came around in my family, my mom would cook your favorite meal.  She had many on the list that everyone loved, but my favorite was always her Spaghetti and Meatballs.  After her passing in 2007, I have tried over and over to replicate it and regretted that I didn’t get the hand written recipe from her when she was still with us.  I think I just tried to add too much.  Well I am so happy to tell you I found out last year that she did leave the recipe to her niece Julie and she shared it with me.  It really could not be more simple unless you bought it already in a jar. I hope you enjoy it as much as I do.

Ingredients: Sauce

3 large cans of tomatoes

2 small cans of tomato paste

1 cup of water

3 tablespoons of sugar

1/2 teaspoon of fresh basil

5 cloves of garlic minced

Instructions:

In a large pot, cook the tomatoes on high for five minutes stirring occasionally. Reduce heat to simmer and add the tomato paste, water, sugar, garlic and basil. Simmer on low for 3 hours.

Ingredients: Meatballs

2 pounds of ground beef

1 small onion, finely chopped

3/4 cup of bread crumbs

1 egg beaten

1 tsp of salt

1/2 tsp of black pepper

2 tsp of olive oil

Instructions:

Mix all the ingredients together and shape into 1 inch balls.  Heat the olive oil to a medium heat in a large frying pan.  Carefully add the meatballs and turn as the brown until done.

Add the meatballs to the sauce and prepare your pasta.
